Frozen Yogurt Bark

This frozen yogurt bark recipe is incredibly enjoyable to prepare! I had a great time decorating mine with a delightful combination of fresh strawberries, blueberries, and pistachios this time. However, the beauty of this recipe lies in its versatility, as you can personalize it with your favorite fruits and nuts. I must confess, this innovative twist on savoring yogurt has truly won me over!

Prep time: 10 minutes

Resting time: 3 hours

Ingredients (serves 4)

  • 2 cups low fat plain yogurt
  • ½ cup sliced strawberries, sliced
  • ¼ cup blueberries
  • ¼ cup pistachios or any other nuts or granola
  • (Optional) Monk fruit sweeteners or raw honey

Instructions

  1. Line a baking sheet with parchment paper.
  2. Spread yogurt evenly on the parchment paper using a spatula.
  3. Sprinkle your favorite fruit and nut toppings on the yogurt. Decorate it your own way and have some fun!
  4. Place the baking sheet in the freezer and let the yogurt bark freeze for a minimum of 3 hours until it becomes firm.
  5. Once the yogurt bark is thoroughly frozen, take it out of the freezer, break it into large, bite-sized chunks and enjoy!

Tips

  1. Opt for low-fat yogurt instead of nonfat yogurt for a creamier and less icy texture.
  2. Spread the yogurt evenly, aiming for a thickness that is not too thin nor too thick.
  3. Allow sufficient time for the bark to set in the freezer. It typically takes about 3 hours to fully set, but for the best results, leave the bars in the freezer overnight. This extended freezing time will make the bark super firm and easily breakable.
  4. To store any leftovers, break the bars into pieces before placing them in an airtight container. This makes it easier to grab individual servings. Keep the container in the freezer, and you can enjoy the yogurt bark for up to 2-3 months.
