High-Protein Lemon Blueberry Breakfast Muffins

Start your day right with these high-protein, balanced muffins! With about 30g of carbs, 20g of protein, and 10g of fat per muffin, they make a perfect breakfast to keep you full and energized.

Lemon Blueberry Breakfast Muffins

Ingredients (Makes 6 Large Muffins)

  • 1 cup oat flour (or whole wheat flour)
  • ½ cup vanilla-flavored protein
  • 1 tsp baking powder
  • ½ tsp baking soda
  • ¼ tsp salt
  • 1 cup fresh or frozen blueberries
  • Zest of 1 lemon
  • 2 tbsp lemon juice
  • 2 eggs (for more protein and structure)
  • ¾ cup Greek yogurt (plain, for protein and healthy fat)
  • 2 tbsp olive oil or melted coconut oil (for balanced fat)
  • ¼ cup honey or maple syrup
  • ¼ cup milk (or milk alternative)
  • 1 tsp vanilla extract

Instructions

  1. Preheat oven to 350°F (175°C). Line or grease a muffin tin.
  2. In a large bowl, whisk together oat flour, protein powder, baking powder, baking soda, and salt.
  3. Add blueberries and lemon zest to the dry ingredients, gently tossing to coat.
  4. In another bowl, whisk eggs, Greek yogurt, oil, honey (or maple syrup), lemon juice, milk, and vanilla extract.
  5. Gradually mix the wet ingredients into the dry ingredients until just combined.
  6. Divide batter evenly among 6 large muffin cups for a satisfying breakfast portion.
  7. Bake for 20–24 minutes, or until a toothpick inserted in the center comes out clean.
  8. Let cool for 5 minutes before transferring to a wire rack.
