Mexican Molletes

Cooking time: 15 minutes

Ingredients (serves 2)

  • 1 medium sized whole wheat bolillo roll
  • 1/2 cup vegetarian low salt refried beans
  • 1/4 cup shredded part skim mozzarella cheese
  • 1/4 cup cooked soy chorizo
  • 1 small Roma tomato (diced)
  • 2 Tbsp cup white onion
  • 1 small jalapeno (Seeded and diced)
  • 2 Tbsp chopped cilantro

Instructions

Mollete Base:

  1. Start by warming up 1/2 cup of refried bean
  2. Slice your bolillo lengthwise and toast to your liking
  3. Spread 1/4 cup onto each toasted side of the bolillo bread
  4. Divide the shredded cheese and chorizo between the 2 toasted bolillos and sprinkle on top of the beans.

Mollete Topping:

  1. In a small bowl, toss together the diced tomato, diced jalapeno, chopped onion and chopped cilantro.
  2. Divide the mixture onto each Mollete base.
  3. Serve and enjoy!
