Homemade Chorizo - Dietitian Approved!

This is a great protein to add to just about any meal to boost the flavor profile of your meals. From skillet potatoes with chorizo and bell peppers to chorizo green beans this will add some interest to your meals and give you a nice tasty backup option to keep life interesting.

  • 1 lb 95-98% lean ground pork or turkey
  • 1 Tbsp cumin - ground
  • 1 Tbsp paprika
  • 2 Tbsp garlic powder, or 1 tbsp pureed fresh garlic
  • 1 tsp coriander - ground
  • 1 tsp chili pepper
  • 1 tsp thyme
  • 1 tsp freshly ground black pepper
  • 1 tsp ground cloves
  • 1/2 tsp cayenne pepper
  • 2 Tbsp apple cider vinegar

Directions:

  • Grind and mix together all spices in a mortar and pestle or a grinder (a blender like a ninja or Vitamix works just fine)
  • In large bowl, combine all ingredients. Mix thoroughly.
  • Refrigerate the sausage mix for 20-30 minutes or overnight to allow the meat to better absorb the spice flavors.
  • Break up into small balls and form patties or 2-inch sausage-sized links if desired.

Go ahead and try this recipe out. If you love it, make extra and freeze it for a quick addition to soups, salads, and any other meal you can think of that needs some protein. Then invite your favorite Dietitian for dinner. :)
